Jazinto Aizpurua is the first sulfite free txakoli in the market. It´s a totally natural produced txakoli, following the recipe and the same techniques that our great grandfater used to handle and work with.
From the technical point of view, our strategy of elaboration has consisted in minimizing the extraction of the compounds susceptible of oxidation in the selection of the grapes. Our goal is, to minimize the contact with the skins and grape scrapes and not to touch the Txakoli until it´s bottled.
Following that process, we get a fresh, natural Txakoli maintaining its whole aroma´s. Así obtenemos un Txakoli con todo su sabor natural. This particular txakoli shines a yellowish colour and offers an explosion of green fruits and white flowers. It´s fresh, moved with a sophisticated fragrance
